Creamy Carrot Ginger Lime Soup

 

This soup is amazing- few soups can compare to this crazy combination.

Give it a whirl and watch your guest’s expressions as they tuck into your smooth creation. I’ve tried it both warm and cold and love both intensely.

INGREDIENTS:
800g peeled & chopped carrots
2 ripe avocados
500ml coconut milk
.25cups lime juice (basically 3 limes)
2 TBS maple syrup
35g fresh ginger
1 small chili pepper
.25 tsp ground sea salt
Corriander sprigs for decoration

DIRECTIONS:
1) Peel avocados and ginger and put them into a powerful mixer or blender together with carrots and coconut milk.

2) Puree for 2 minutes or until the consistency is nice and smooth. Then add everything else into the blender and puree further until you get a nice creamy texture.

3) serve cold or warm
