Muffins from Manchester Highlands Inn

Robert Eichhorn published a cookbook a few decades ago including a few recipes from guests. This is one of the recipes that earned the title 'most requested muffin' at the inn. 'Morning Glory Muffins'... Enjoy!

INGREDIENTS:
- 4 c flour
- 2.5 c sugar
- 4 tsp baking soda
- 4 tsp cinnamon
- pinch of salt
- 4 c grated carrots (.5kg or 1lb)
- 1 c raisins 
- 1 c shredded coconut
- 2 apples (peeled and grated)
- 6 eggs
- 4 tsp vanilla
- 2 c vegetable oil (raps, canola etc)

INSTRUCTIONS:
In a large bowl, mix together the flour, sugar, baking soda, cinnamon, and salt. Stir in carrots, raisins, coconut, and apples and set aside.
In a separate bowl (kitchenaid) beat eggs with vanilla and vegetable oil. Add the flour mixture and combine well (aka kitchenaid level 1)
Spoon the batter into greased muffin tins almost to rim and bake at 175º C / 350ºF for approx 35 mins. This recipe produces 36 muffins.
