1 teaspoon lemon-pepper seasoning or your choice of pepper
pinch of salt
1 teaspoon garlic salt or a few cloves of almond sliced fresh garlic
1 teaspoon or a sprig of thyme (suggestion: strip the thyme off the branch)
Preparation
Preheat barbecue (medium heat). Score the cut side of each zucchini diagonally so that the oil and herbs seep into each half.
Combine the olive oil with lemon juice, lemon-pepper seasoning, garlic and thyme in a small saucepan. Season with salt and pepper.
Brush seasoned oil on cut side of zucchini.
Place the zucchini on your BBQ grill and cook until charred on all sides and just beginning to soften, about 12 minutes. Flip them only once if possible
or
Make a tray out of alum foil and then place zucchini in the alum. foil on the grill. Cover the zucchini with the alum foil and seal it to prevent too much evaporation and then 15 mins later your juicy and tasty zooks will be ready to serve.
mom says on days when we don’t want to use the BBQ, we should try to slice zucchini medium to thick and fry in olive oil with garlic, salt, pepper, thyme. When brown turn over and add grated parmesan.
